Sourced from various terroirs across the vineyard, the Estate Sauvignon Blanc is a representation of the unique site. Following the French tradition, the vineyard is planted in high density. Dry farming and organic practices allow for natural vine balance, stressing the vines just to the right level. This forces the roots to go deeper into the soil, obtaining the purest expression of the terroir and showcasing more minerality from the stone soils.

After the grapes are harvested, they are gently pressed, and the free-run juice is separated from the hard pressings. Fermentation occurs in stainless steel tanks to retain purity of fruit and flavor. The wine is then aged on fine yeast lees for three months, with lees stirring over this period, allowing the wine to stabilize naturally. The result is a textural, complex, and round wine, showcasing the vineyard's unique terroirs.
